There are several types of pork chops, including center cut (or lion chop), rib, sirloin, and blade chops. The best type of pork chop for a recipe will depend on the desired level of tenderness and flavor.
My fav type one is "lion chops" and I usually marinate the chops in a mixture of yogurt, ginger, garlic, turmeric, cumin, and coriander. Then grill the chops until cooked through.
Sometimes i serve the pork chops with a side of basmati rice and a yogurt-based sauce, such as raita. Some vegetables like eggplant or spinach sautéed with spices like cumin, mustard seeds, curry leaves and green chillies would also complement the dish well.
You can also add some herbs like coriander leaves, mint leaves, and curry leaves to the marinade for a more authentic Indian flavor.
